What is Strolghino?

Strolghino is a unique type of Italian salami that hails from the Emilia-Romagna region, particularly from the area of Parma. This salami stands out for its high-quality ingredients and the particular production process it undergoes. It is made using the finest parts of the pig, often from the freshest and leanest meat such as that of the thigh or culatello.

Why is Strolghino so good?

Strolghino from Roncole Verdi is obtained during the production process of the prized Culatello; in fact, to give the latter its traditional "pear" shape, it is necessary to trim it, thus obtaining the precious meat that will be used in its production. Strolghino is cased immediately after slaughter, which helps to preserve the fresh and natural flavor of the meat.

What are the right pairings to best enjoy Strolghino?

To best enjoy Strolghino, some considerations are required. Here are our suggestions:

With bread: Strolghino pairs perfectly with crunchy bread. The contrast between the softness of the salami and the crunchiness of the bread helps to enhance the delicate flavors of Strolghino.

As an appetizer: Serving Strolghino as an appetizer along with other cured meats and cheeses is a great idea. It can be paired with semi-matured cheeses to create a balance of flavors.

Pairing with wine: Strolghino, for its lightness and delicacy, pairs well with young, fruity white wines. A good Malvasia dei Colli di Parma can be an excellent choice.

In the kitchen: Although it is excellent enjoyed naturally, Strolghino can also be used in the kitchen. For example, it can be an interesting ingredient in a pizza or risotto, to give a delicate and distinctive flavor.

How to preserve

The correct preservation of Strolghino is essential to maintain its flavor and texture intact. Here are some tips to preserve it in the best way:

Temperature: After purchase, Strolghino should be stored in the refrigerator, preferably in the least cold part. The ideal temperature for storage varies between 4°C and 8°C.

Packaging: Once opened, Strolghino should be wrapped in food paper or stored in an airtight container to prevent air from drying it out. Avoid using plastic wrap, as it could retain moisture and promote the formation of mold.

Consumption: To best enjoy the flavor of Strolghino, you should try to consume it within a few days of opening. If stored correctly, it can last a bit longer, but its flavor will be better if consumed in the shortest possible time.

Whole Strolghinos: If you have a whole, uncut Strolghino, it can be stored at room temperature in a cool, dry place, away from heat sources or direct sunlight. Make sure the environment is well ventilated to prevent the formation of mold.

Always remember to let Strolghino come to room temperature for about 30 minutes before serving. This will allow the flavors to fully develop, enhancing the organoleptic characteristics of the product.
