The Malghesino with Saffron (Gorgonzola) is a soft, blue-veined cheese made from whole cow's milk that has been pasteurized.
Flavor:
The "Natural" type has a decidedly spicy flavor with a hint of saffron.
Color:
The cheese has a yellow paste, marbled with the development of molds showing blue/greenish veins. It has a gray and/or pinkish rind that is NOT EDIBLE.
Texture:
To the touch, it feels "solid" and creamy, with a smooth paste without holes. In the mouth, it is soft and well-blended, easily melting away.
