From the hills of the Langhe, a UNESCO World Heritage site, comes Toma Brilla: a cheese made from 100% Piedmontese milk that embodies the connection between territory, winemaking tradition, and artisanal expertise.
The grapes, hand-harvested, the work of master winemakers, and the time of maturation find a new expression here. After an initial aging period of 60 days, the toma is further refined for two more months in Barbaresco and Barolo DOCG grape pomace.
This process gives it its characteristic deep red color and an intense, enveloping aromatic profile, enriched by hints of must.
