Carloforte Red Tuna is the true wild "Running" Thunnus Thynnus, caught in the best period of the year for the state of its flesh.

The tunas used are exclusively Mediterranean quality Bluefin (Thunnus Thynnus) or trap red tuna. Only the most prized fillet, called "maccarone" in tuna jargon, is taken, which has the characteristic of being less fatty and with an unmistakable taste. Everything is handcrafted: the tuna is steamed, canned in large containers and, like fine wine, subjected to aging.

Great to enjoy on its own with a cracker or in combination with legumes, tomatoes, or green salad, or in more delicious pairings with fresh and creamy cheeses.

Why is it called "Running" Tuna?

The term "running" in the context of Carloforte's red tuna refers to the traditional fishing technique used in the area, called the "tuna trap".

This fishing technique, which dates back many centuries, involves the use of a series of fixed nets that are positioned in a certain way to capture tunas while they "run" or migrate through the waters in their annual life cycle. When the tunas "run", or migrate, they pass through this system of nets, enter a series of ever-smaller chambers, and are finally collected.
This fishing technique is very environmentally friendly because it is based on the natural migration of the fish, does not require the use of fuel like industrial fishing techniques, and allows only adult tunas to be caught, leaving the young ones to maintain the population. So when we talk about "running" Carloforte's red tuna, we are referring to a tuna that has been caught using this traditional and sustainable fishing technique.

Carloforte's red tuna is considered one of the best in the world for several reasons:

Fishing technique: The traditional "tuna trap" technique catches tunas during their natural migration, when they are at the peak of their physical form. This respect for the natural life cycle of the tuna ensures that only the healthiest and most robust fish are caught.
Tuna quality: The red tuna of the Mediterranean, in particular the one that migrates near Carloforte, is famous for its high-quality meat, with a rich flavor and firm consistency.
Sustainability: The "running" fishing technique is ecological and sustainable. By fishing only adult tunas during their migration, reproduction is guaranteed and therefore the maintenance of the species.
Preparation and conservation: Carloforte's tradition includes ancient preparation and conservation techniques, which contribute to the unique flavor of the tuna. Every part of the fish is used and valued, from the belly (the most valuable part) to the bottarga (dried and salted eggs).
Reputation: Carloforte has a long history and a solid reputation in tuna fishing. This legacy, combined with the high quality of Carloforte's red tuna, has led Carloforte's tuna to be recognized as one of the best in the world.

How to Enjoy

Here are some suggestions on how to enjoy it:

Salads: Canned tuna can easily be added to salads for a touch of flavor and protein. A classic example is the Niçoise salad, which includes tuna, olives, tomatoes, hard-boiled eggs, and anchovies.
Pasta: Canned tuna can be used in various pasta dishes. A simple suggestion is to mix it with sautéed garlic, chili pepper, parsley, and a little olive oil. This condiment pairs perfectly with spaghetti or linguine.
Bruschetta or Crostini: A slice of toasted bread, a drizzle of olive oil, a sprinkle of oregano, and on top of canned tuna can create a tasty and simple appetizer.
On its own: Given that Carloforte's "running" tuna is a high-quality product, it can be enjoyed directly from the can. A drizzle of extra virgin olive oil, a pinch of salt, and a touch of lemon may be all that is needed to enhance the rich flavor of the tuna.

Remember that, unlike other types of canned tuna, Carloforte's "running" tuna tends to have a more robust and rich flavor, which means it can stand up to even the strongest condiments. However, it is always worth tasting it on its own to fully appreciate its unique flavor.
