There are grappas for sipping slowly and grappas with a story to tell. And then there’s rue grappa, the one that comes out at the end of a meal in Trentino, no explanation needed.
Borgo Vecchio has been making it since 1959 in Ospedaletto, in the Valsugana valley, where the Cavalin family has been distilling for three generations.
The method is simple. It starts with a selected grappa, distilled using the traditional Trentino discontinuous artisanal method. Ruta graveolens leaves are left to infuse in it, and the herb does the rest. It gives the spirit the faintest green tint and a delicate, aromatic nose.
On the palate it leaves a balsamic imprint, with a bitter edge that cleanses the mouth.
It doesn’t try to please everyone, and that’s exactly why those who know it never switch.
