Oak is the most common choice for ageing grappa, while cherry wood, used far more rarely, gives it a different personality, gentler and more floral.
Borgo Vecchio starts from a blend of Trentino pomace, distilled in a discontinuous steam still, and leaves the grappa to rest for at least twelve months in cherry-wood barriques and small casks which is under the seal of the Italian Customs Agency as a guarantee of the time spent in wood. From the cherry wood the grappa takes on a characteristic straw-yellow colour and floral aromatic notes, which give it a recognisable character without masking the soul of the Trentino spirit.
It’s an aged grappa for those who want to step off the well-trodden oak path and discover what a different wood has to say.
